Deeply aromatic, Vietnamese or Saigon Cinnamon has a strong, spicy cinnamon taste due to its naturally high levels of essential oil content. Originating in Vietnam, this cinnamon admittedly makes a good first impression in terms of sheer aroma and taste. It tends to be spicy and strong, and sweet all at the same time. Wonderful in cooking, teas, and next level cinnamon toast.
Please note: Saigon cinnamon is more closely related to cassia (C. cassia) than to Ceylon cinnamon (C. verum), though in the same genus as both. Saigon cinnamon has 1-5% essential oil in content and 25% cinnamaldehyde in essential oil, which is the highest of all the cinnamon species. Additionally it has a higher coumarin content, therefore health and dietary restrictions should be considered before usage.
